WHOLE MACE
Mace is the outer shell of the nutmeg fruit. It has a lighter, sweeter flavor. Whole mace spice is the entire outer casing to a nutmeg and is used to add a rich red-orange hue and delicate sweet woodsy flavor to dishes. Mace and nutmeg are both very widely used worldwide and have a variety of culinary applications as both a garnish and spice.
Mace is the lacy outer covering (called an 'aril') of nutmeg. As such it carries a similar yet milder and somewhat more versatile flavour into both sweet and savoury recipes. Because it is not as punchy or sharp as ginger, mace blades are often used in Indian cooking and spicy cuisine. But they also make a delicious tea, and have many more applications.
